Spring Greens Pesto

Mixed Green Pesto

Yield:  1/2 cup

Ingredients
1 ½ cups packed greens
1 small garlic clove, peeled
? cup olive oil
½ cup grated parmesan cheese
Salt and pepper, to taste
¼ cup walnuts, almonds, pine nuts, or sunflower seeds (optional)


Directions
  1. Place nuts, greens, and garlic in a food processor and blend until everything is finely chopped. Scrap down sides of the bowl and process again.
  2. Add parmesan cheese and, with the motor running, add olive oil in a steady stream. When the pesto looks saucy, stop adding oil.
  3. Turn off food processor. Mix in salt and pepper, to taste.

Yogurt Ranch Dressing

Yogurt Ranch Dressing

Total: 35 minutes (including cooling)
Yield: 1 ½ cup

Ingredients
½ cup plus 2 Tbsp. nonfat plain yogurt
½ cup plus 2 Tbsp. lowfat buttermilk
¼ cup mayonnaise
1 ½ tsp. lemon juice
1 ¼ tsp. dijon mustard
½ tsp. onion powder
½ tsp. garlic powder
1 Tbsp. finely chopped chives
Salt and pepper, to taste

Directions
  1. Combine all ingredients in a mixing bowl.
  2. Add salt, to taste.
  3. Let chill for at least 30 minutes before serving.
